Easy Deviled Eggs
Healthy, easy deviled eggs, perfect for Easter!
  • 12 hard boiled eggs (see notes above)
  • ¼ cup mashed avocado (from ½ medium avocado)
  • 1 tsp. olive oil
  • 1 tsp. apple cider vinegar
  • ¼ tsp. dried mustard powder
  • ¼ tsp. Himalayan salt (to taste)
  • ½ tsp. xylitol or coconut palm sugar (optional)
  • Paprika, to garnish (optional)
  1. Cool the eggs.
  2. Carefully slice the eggs lengthwise with a sharp knife, separating the cooked yolk from the egg whites.
  3. Place egg yolks, mashed avocado and all other ingredients in a mixing bowl.
  4. Beat ingredients until well combined and creamy.
  5. Pipe, or spoon, the filling into the egg whites and sprinkle with paprika.
