Sausage Balls

A healthy Paleo snack that will fuel your mind and body for hours.
Ingredients
  • 2 cups almond flour
  • 1 tbsp. grain-free baking powder (see recipe here)
  • 1 tsp. himalayan salt
  • ⅓ cup organic shortening, coconut oil or grass fed butter
  • ½ lb. grass-fed sausage (nitrate/nitrite free, MSG free, BHT free)
  • 2 cups organic raw cheddar cheese
Instructions
  1. Sift together the almond flour, baking powder and salt in a medium mixing bowl.
  2. Process shortening (or butter or coconut oil) into the flour mixture with a pastry fork until it resembles fine, soft crumbs. Set aside.
  3. In a large bowl, combine sausage and cheese.
  4. Process 1½ cup of the flour mixture into the sausage mixture until well combined.
  5. Work sausage mixture into 1 inch balls and place on glass baking dish.
  6. Bake at 350 degrees for 20-25 minutes, or until the sausage is cooked thoroughly.
