Gluten-free Oreos (Paleo and Vegan Friendly)
Gluten free Oreos. Homemade goodness without the sugar.
  • ½ cup almond meal (or flour)
  • ¼ cup cocoa powder
  • 2 tbsp. tapioca or arrowroot starch (recommended)
  • ½ tsp. baking soda
  • 6 tbsp. xylitol or coconut palm sugar
  • ⅛ tsp. stevia extract powder (or 3 packets stevia)
  • ⅛ tsp. Himalayan salt
  • 2 tbsp. melted coconut oil
  • 1 large egg white
  • ½ cup coconut butter (not coconut oil)
  • ¼ cup powdered xylitol (or other desired sweetener)
  1. In a medium mixing bowl, whisk together all dry ingredients.
  2. In a larger bowl, whisk together the coconut oil and egg white.
  3. Mix the dry ingredients with the wet ingredients.
  4. Roll batter into ½" balls and place evenly on a cookie sheet.
  5. Coat the back of a round device (spice lid, measuring cup) with cocoa flour and press each ball down to make a flat cookie.
  6. Bake at 325 degrees for 8-10 minutes (but not more).
  7. Let cool completely before transferring to a serving plate. Store in freezer to harden.
  8. Meanwhile, mix the coconut butter (not coconut oil) with your desired sweetener.
  9. Take cookies out the freezer and place 2 tsp. of coconut butter filling in between two, making a sandwich cookie.
  10. Makes 1 dozen sandwich cookie Oreos.
