Welcoming Summer with Vanilla Ice Cream
Delicious dairy-free coconut milk ice cream that's sweet, healthy and delicious.
  • 4 egg yolks
  • ½-3/4 cup sweetener (I used 6 tbsp. palm sugar/xylitol + ⅛ tsp. stevia)
  • 2 cups homemade coconut milk
  • 1 tsp. pure vanilla extract (not imitation)
  • Additional Ingredients (see below)
  1. In a small mixing bowl, whisk together egg yolks and sweetener. Set aside.
  2. Meanwhile, heat coconut milk on the stove on low heat, whisking continually.
  3. Once the coconut milk is slightly warm (I didn't use a thermometer), but not boiling, whisk ¼ cup of milk into the egg mixture.
  4. Whisk the egg mixture quickly to avoid cooking the eggs.
  5. Pour the egg and ¼ milk mixture into the coconut milk on the stove and cook, whisking continually for 5 minutes.
  6. Whisk the milk mixture until it becomes slightly frothy and thick (do not boil or it will scramble the eggs).
  7. Turn off heat and let cool.
  8. Transfer to ice cream maker, add additional ingredients (see below) and follow your maker's instructions.
