Gluten Free Pancake Recipe

- ¼ cup coconut flour
- ¼ cup gluten-free oat flour (see notes above)
- ½ tsp. baking soda
- ½ tsp. grain-free baking powder
- ⅛ tsp. Himalayan salt
- 2 tbsp. xylitol (recommended)
- ¼ cup melted coconut oil
- 2 eggs, room temperature
- ½-3/4 cup almond milk or coconut milk
- ¼ tsp. vinegar
- In a medium bowl, sift together all dry ingredients. Set aside.
- In a small bowl, whisk together all liquid ingredients.
- Mix together the dry ingredients with the liquid ingredients.
- Grease a frying pan and place on low to medium heat.
- Pour 1½ tbsp. of batter onto the frying pan, forming a circle.
- Cook on both sides for 2 minutes, or until you can safely work a spatula around and flip the cakes.
- Makes about 1 dozen pancakes.
