Gluten Free Pancake Recipe
Gluten free pancake recipe made with coconut flour and certified gluten-free oat flour. Delicious and nutritious.
  • ¼ cup coconut flour
  • ¼ cup gluten-free oat flour (see notes above)
  • ½ tsp. baking soda
  • ½ tsp. grain-free baking powder
  • ⅛ tsp. Himalayan salt
  • 2 tbsp. xylitol (recommended)
  • ¼ cup melted coconut oil
  • 2 eggs, room temperature
  • ½-3/4 cup almond milk or coconut milk
  • ¼ tsp. vinegar
  1. In a medium bowl, sift together all dry ingredients. Set aside.
  2. In a small bowl, whisk together all liquid ingredients.
  3. Mix together the dry ingredients with the liquid ingredients.
  4. Grease a frying pan and place on low to medium heat.
  5. Pour 1½ tbsp. of batter onto the frying pan, forming a circle.
  6. Cook on both sides for 2 minutes, or until you can safely work a spatula around and flip the cakes.
  7. Makes about 1 dozen pancakes.
